Heat the oil in a non-stick pan over low-medium heat. Add in the potatoes and season with salt; cook for 3 - 5 minutes per side until you get a nice golden brown and they become crispy and tender inside. Set aside on paper towels and season with salt.
Add the chicken sausage to the pan and brown, then add the eggs and cheese. Move the eggs around the pan until they become firm and fluffy but still moist. Stir in the scallions. Season with salt and pepper.
