Ingredients
Soup
- 6 oz Ground beef
- 1/4 cup Onion diced
- 1/4 cup Carrots diced
- 1/4 cup Celery diced
- 3 cloves Garlic chopped
- 1 cup Canned diced tomato
- 3 cups Chicken broth
- 1 tsp Fresh thyme minced
- 1 tsp Dried oregano
- 1/2 cup Red kidney beans drained and rinsed
- 1/2 cup Cannellini beans
- 3/4 cup Ditalini pasta or your choice of small pasta
- 2 TBSP Parmesan cheese grated
Garlic Bread
- 2 slices Crusty bread
- 4 tsp Butter
- 1 clove Garlic minced
Lemon Spritzer
- 24 oz Sparkling water cold
- 2 TBSP Lemon juice
Ice Cream
- 2 cups Your favorite ice cream
Instructions
- Heat a pot over medium heat. Add the ground beef, onion, carrot, celery, and garlic. Brown the beef while breaking it up into smaller pieces.
- Add the tomatoes, broth, thyme, oregano, and beans, and season well with salt. Cover with a lid and bring to a simmer for 15-20 minutes. Taste and adjust the seasoning with salt and pepper.
- Add the pasta, cover with a lid, and cook until tender. Refer to the instructions on the package for cooking time.
- Toast the bread then spread with butter and garlic. Season with salt and pepper.
- Mix the ingredients for the spritzer. Serve over ice if desired.
- Serve the soup with garlic bread and spritzer. Enjoy with ice cream.
