Ingredients

Soup

  • 6 oz Ground beef
  • 1/4 cup Onion diced
  • 1/4 cup Carrots diced
  • 1/4 cup Celery diced
  • 3 cloves Garlic chopped
  • 1 cup Canned diced tomato
  • 3 cups Chicken broth
  • 1 tsp Fresh thyme minced
  • 1 tsp Dried oregano
  • 1/2 cup Red kidney beans drained and rinsed
  • 1/2 cup Cannellini beans
  • 3/4 cup Ditalini pasta or your choice of small pasta
  • 2 TBSP Parmesan cheese grated

Garlic Bread

  • 2 slices Crusty bread
  • 4 tsp Butter
  • 1 clove Garlic minced

Lemon Spritzer

  • 24 oz Sparkling water cold
  • 2 TBSP Lemon juice

Ice Cream

  • 2 cups Your favorite ice cream

Instructions

  • Heat a pot over medium heat. Add the ground beef, onion, carrot, celery, and garlic. Brown the beef while breaking it up into smaller pieces.
  • Add the tomatoes, broth, thyme, oregano, and beans, and season well with salt. Cover with a lid and bring to a simmer for 15-20 minutes. Taste and adjust the seasoning with salt and pepper.
  • Add the pasta, cover with a lid, and cook until tender. Refer to the instructions on the package for cooking time.
  • Toast the bread then spread with butter and garlic. Season with salt and pepper.
  • Mix the ingredients for the spritzer. Serve over ice if desired.
  • Serve the soup with garlic bread and spritzer. Enjoy with ice cream.
