Ingredients
- 1 cup Oatmeal
- 4 oz Cheddar cheese shredded
- 6 oz Chicken sausage links diced
- 2 tsp Extra-virgin olive oil
- 8 Eggs
- 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
- 1 tbsp Fresh chives chopped
Instructions
- Cook the oatmeal according to the instructions on the package. Season with salt to taste, top with cheese, cover with a lid, and set aside.
- In a non-stick pan over medium heat, brown the chicken sausage on all sides.
- Heat the oil in a non-stick pan over medium heat. Crack the eggs into the pan. Cook until the whites start to set, then give the pan a jiggle just to make sure there's no sticking. Season with a pinch of salt and pepper and continue to cook over low heat until the whites become opaque. Gently flip the eggs over and cook for 20-30 seconds longer.
- Serve the eggs over the oatmeal with chicken sausage and apple. Garnish with chives.
