Ingredients
- 1 tbsp Extra-virgin olive oil
- 6 oz Deli ham chopped
- 8 Eggs beaten
- 4 oz Muenster cheese shredded
- 4 Whole wheat tortilla
- 1 cup Mango peeled and diced (Check the Fruit guide to substitute seasonal fruits)
- 1 cup Cottage Cheese
Instructions
- Heat the oil in a non-stick pan over medium heat.
- Add in the ham and sauté for 2-3 minutes.
- Next add in the eggs. Move the eggs around the pan using a spatula until they are firm but still moist and no longer runny. Mix in the cheese and adjust the seasoning with salt and pepper to taste.
- Place the eggs on the wrap. Fold in the ends and roll tightly.
- In a pan over medium heat, place the wrap seam side down for about 2 minutes until golden brown then flip over and do the same on the other side.
- Cut in half and serve with mango and cottage cheese.
