Chopped Kale Salad

Ingredients

  • 2 cups Kale chopped
  • 1 tsp Sliced almonds
  • 1/4 cup Radish sliced thin
  • 2 tsp Gold raisins

Dressing

  • 2 tsp Extra-virgin olive oil
  • 1/2 tsp Apple cider vinegar
  • 1/4 tsp Dijon mustard
  • 1/4 tsp Honey

Instructions

  • Pull the kale leaves off from the stems and discard the stems. Chop the kale into small pieces and transfer to a bowl. Season with salt and massage the leaves with your hands by lightly scrunching big handfuls at a time.
  • In a small bowl, whisk the dressing ingredients together and toss the kale with dressing. Let sit.
  • When ready to serve, portion and top with almonds, radish, and raisins.
