Ingredients
- 2 cups Kale chopped
- 1 tsp Sliced almonds
- 1/4 cup Radish sliced thin
- 2 tsp Gold raisins
Dressing
- 2 tsp Extra-virgin olive oil
- 1/2 tsp Apple cider vinegar
- 1/4 tsp Dijon mustard
- 1/4 tsp Honey
Instructions
- Pull the kale leaves off from the stems and discard the stems. Chop the kale into small pieces and transfer to a bowl. Season with salt and massage the leaves with your hands by lightly scrunching big handfuls at a time.
- In a small bowl, whisk the dressing ingredients together and toss the kale with dressing. Let sit.
- When ready to serve, portion and top with almonds, radish, and raisins.
