Pull the kale leaves off from the stems and discard the stems. Chop the kale into small pieces and transfer to a bowl. Season with salt and massage the leaves with your hands by lightly scrunching big handfuls at a time.
In a small bowl, whisk the dressing ingredients together and toss the kale with dressing. Let sit.
When ready to serve, portion and top with almonds, radish, and raisins.
