Ingredients
- 8 oz Ramen noodles or noodles of your choice
- 2 tbsp Extra-virgin olive oil
- 3/4 lb Chicken breast boneless skinless sliced into thin strips
- 2 tbsp Garlic chopped
- 1 tbsp Fresh ginger minced
- 1/2 cup Chicken broth
- 1/4 cup Milk
- 1 tbsp Peanut butter
- 2 tbsp Reduced-sodium soy sauce
- 1 tbsp Lime juice or more if needed
- 1 cup Broccoli bite sized florets
- 1/4 cup Carrots shredded
- 1/4 cup Fresh cilantro chopped
- 2 tbsp Peanuts chopped
Instructions
- Prepare noodles according to package directions; drain and set aside.
- Heat the oil in a non-stick pan over medium-high heat. Add the chicken, garlic, and ginger. Sauté until the chicken starts to lightly brown.
- Add the broth, milk, peanut butter, soy sauce, and lime juice. Turn down the heat and bring to a simmer. Add in the broccoli and carrots, cover with a lid and simmer until tender. Toss in the noodles. (Taste and adjust the seasoning with more lime juice or salt.)
- Garnish with cilantro and chopped peanuts.
