Thai Chicken Stir Fry

Ingredients

  • 8 oz Ramen noodles or noodles of your choice
  • 2 tbsp Extra-virgin olive oil
  • 3/4 lb Chicken breast boneless skinless sliced into thin strips
  • 2 tbsp Garlic chopped
  • 1 tbsp Fresh ginger minced
  • 1/2 cup Chicken broth
  • 1/4 cup Milk
  • 1 tbsp Peanut butter
  • 2 tbsp Reduced-sodium soy sauce
  • 1 tbsp Lime juice or more if needed
  • 1 cup Broccoli bite sized florets
  • 1/4 cup Carrots shredded
  • 1/4 cup Fresh cilantro chopped
  • 2 tbsp Peanuts chopped

Instructions

  • Prepare noodles according to package directions; drain and set aside.
  • Heat the oil in a non-stick pan over medium-high heat. Add the chicken, garlic, and ginger. Sauté until the chicken starts to lightly brown.
  • Add the broth, milk, peanut butter, soy sauce, and lime juice. Turn down the heat and bring to a simmer. Add in the broccoli and carrots, cover with a lid and simmer until tender. Toss in the noodles. (Taste and adjust the seasoning with more lime juice or salt.)
  • Garnish with cilantro and chopped peanuts.
