Ingredients
- 6 oz Ground Italian Turkey Sausage formed into patties
- 2 tsp Extra-virgin olive oil
- 8 Eggs beaten
- 4 Tortilla wraps
- 4 oz Cheddar cheese shredded
- Nonstick spray
- Hot sauce optional
- 1 Orange sectioned (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Heat a non-stick pan over medium heat.
- Add the sausage and cook on both sides to an internal temperature of 155°F using a thermometer, about 2 minutes per side. Then set aside.
- Add 1/4 of the oil to the pan. Once hot, add the eggs to the pan and move them around the pan with a rubber spatula until they are no longer runny but still moist (not dried out). Season with salt and pepper. Set aside.
- Make one slit in the wrap from the center.
- Arrange the sausage, eggs, cheese, and hot sauce (if using) onto the wrap (see pro tip video).
- Heat a non-stick pan over medium heat. Lightly grease the pan with non-stick spray as needed, and cook the pocket on both sides until golden brown.
- Serve with oranges.
