  • Heat a non-stick pan over medium heat.
  • Add the sausage and cook on both sides to an internal temperature of 155°F using a thermometer, about 2 minutes per side. Then set aside.
  • Add 1/4 of the oil to the pan. Once hot, add the eggs to the pan and move them around the pan with a rubber spatula until they are no longer runny but still moist (not dried out). Season with salt and pepper. Set aside.
  • Make one slit in the wrap from the center.
  • Arrange the sausage, eggs, cheese, and hot sauce (if using) onto the wrap (see pro tip video).
  • Heat a non-stick pan over medium heat. Lightly grease the pan with non-stick spray as needed, and cook the pocket on both sides until golden brown.
  • Serve with oranges.
