Add the sausage and cook on both sides to an internal temperature of 155°F using a thermometer, about 2 minutes per side. Then set aside.
Add 1/4 of the oil to the pan. Once hot, add the eggs to the pan and move them around the pan with a rubber spatula until they are no longer runny but still moist (not dried out). Season with salt and pepper. Set aside.
Make one slit in the wrap from the center.
Arrange the sausage, eggs, cheese, and hot sauce (if using) onto the wrap (see pro tip video).
Heat a non-stick pan over medium heat. Lightly grease the pan with non-stick spray as needed, and cook the pocket on both sides until golden brown.
