Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 Potato peeled and shredded
  • 1 tbsp Red onion diced
  • 1/4 cup Green bell pepper diced
  • 4 oz Chicken sausage links chopped
  • 8 Eggs
  • 2 slices Sourdough bread toasted (or bread of your preference)
  • 1 Orange peeled and sectioned, (Check the Fruit guide to substitute seasonal fruits)
  • 6 leaves Fresh parsley garnish (optional)

Instructions

  • Preheat the oven broiler on low.
  • Heat oil in a non-stick pan over medium heat. Add in the potatoes and flatten them out in the pan. Mix in the onion, pepper, and chicken sausage; season with salt and pepper. Cook for about 6-8 minutes or until the bottom is golden brown. Using a spatula, gently flip the potatoes over.
  • With the back of a spoon, make evenly spaced pockets in the potato mixture. Crack an egg into each pocket.
  • Transfer the pan to the oven underneath the oven broiler, cook for about 4-6 minutes until the whites of the eggs are firm; then divide into portions.
  • Toast the bread. Serve with orange sections and garnish with parsley.
