Ingredients
- 2 tsp Extra-virgin olive oil
- 3 tbsp Onion diced
- 4 tbsp Green bell pepper seeded and diced
- 6 oz Chicken sausage links diced
- 8 Eggs beaten
- 4 oz Cheddar cheese
- 8 slices Sourdough bread lightly toasted, (or bread of your choice)
- 4 tsp Hot sauce optional
- 2 Pears sliced (Check the Fall Fruit guide to substitute seasonal fruits)
Instructions
- In a non-stick pan, heat the oil over medium heat. Add the onions and peppers, sauté until soft for about 3-5 minutes. Add in the chicken sausage and cook for 3 minutes.
- Add the eggs to the pan. Cook for approximately 1-2 minutes, without stirring, until egg mixture begins to set.
- Using a non-stick spatula, gently lift a corner of the egg and tilt the pan to allow uncooked egg to flow underneath. Cook until set. Repeat the procedure until the egg is no longer runny.
- Add the cheese and fold in half to melt.
- Lightly toast the bread to a golden brown, but still remaining somewhat soft.
- Portion the eggs onto the bread. Drizzle with hot sauce if desired. Cut in half and serve with pears.
