In a non-stick pan, heat the oil over medium heat. Add the onions and peppers, sauté until soft for about 3-5 minutes. Add in the chicken sausage and cook for 3 minutes.
Add the eggs to the pan. Cook for approximately 1-2 minutes, without stirring, until egg mixture begins to set.
Using a non-stick spatula, gently lift a corner of the egg and tilt the pan to allow uncooked egg to flow underneath. Cook until set. Repeat the procedure until the egg is no longer runny.
Add the cheese and fold in half to melt.
Lightly toast the bread to a golden brown, but still remaining somewhat soft.
Portion the eggs onto the bread. Drizzle with hot sauce if desired. Cut in half and serve with pears.
