Ingredients
- 16 oz Sirloin steaks use Strip steak to enhance the meal if desired
- 2 tbsp Steak seasoning montreal steak seasoning or comparable brand
- 4 tbsp Extra-virgin olive oil
- 3 clove Garlic minced
- 2 tbsp Lime juice
- 6 tbsp Fresh parsley chopped
- pinch Red pepper flakes optional
- 4 sprigs Fresh thyme
- 4 slices Crusty bread
Instructions
- Preheat a cast iron skillet or nonstick pan on medium heat. Season both sides of the steak with steak seasoning, salt and pepper.
- Gremolata: In a bowl mix together the majority of the oil (reserving 1-2 teaspoons), garlic, lime juice, parsley, salt and pepper, and red pepper flakes (if using). Set aside.
- Once the pan is hot add 1-2 teaspoons of oil to the pan, cook the steak on both sides to get a nice crusty char on each side to your desired temperature using a thermometer. (See notes below.) Once cooked set aside to rest for 5 minutes.
- Slice the steak against the grain. Spoon the gremolata over the steak. Garnish with thyme serve with bread.

Steak Internal Temperatures:
- Rare: 115 - 120 degrees F
- Medium Rare: 125 - 130 degrees F
- Medium: 135 - 140 degrees F
- Medium Well: 145 - 150 degrees F
- Well Done: 160 degrees F
