Preheat a cast iron skillet or nonstick pan on medium heat. Season both sides of the steak with steak seasoning, salt and pepper.
Gremolata: In a bowl mix together the majority of the oil (reserving 1-2 teaspoons), garlic, lime juice, parsley, salt and pepper, and red pepper flakes (if using). Set aside.
Once the pan is hot add 1-2 teaspoons of oil to the pan, cook the steak on both sides to get a nice crusty char on each side to your desired temperature using a thermometer. (See notes below.) Once cooked set aside to rest for 5 minutes.
Slice the steak against the grain. Spoon the gremolata over the steak. Garnish with thyme serve with bread.
