Preheat oven to 350°F and grease a pie dish or appropriately sized oven safe vessel with non-stick spray.
Heat a non-stick pan over medium heat. Sauté the sausage and break up into smaller pieces until no longer pink. Add in the onion and garlic and sauté for another 2 minutes. Set aside to cool.
Squeeze out the excess moisture from the shredded zucchini before using for best results. Combine all ingredients in a large bowl then pour into a prepared pie plate.
Bake at 350°F for 30-45 minutes or until fully set (a toothpick inserted into the center should come out clean).
Heat a non-stick pan over medium heat. Brown the pita on both sides. Drizzle with oil. Cut into wedges.
Remove from oven and cool for 2-3 minutes before serving.
Cut into portions and serve with pita and garnish with parsley.
