Zucchini Pie

Ingredients

  • Nonstick spray
  • 1/2 lb Ground Italian Turkey Sausage
  • 1 tbsp Onion minced
  • 2 cloves Garlic minced
  • 4 cups Zucchini shredded (about 2 medium zucchini)
  • 6 Eggs beaten
  • 1/2 cup Milk
  • 1 cup Fontina cheese shredded
  • 2 tbsp Parmesan cheese grated

Bread

  • 2 Pita bread
  • 2 tsp Extra-virgin olive oil
  • 1 tbsp Fresh parsley chopped

Instructions

  • Preheat oven to 350°F and grease a pie dish or appropriately sized oven safe vessel with non-stick spray.
  • Heat a non-stick pan over medium heat. Sauté the sausage and break up into smaller pieces until no longer pink. Add in the onion and garlic and sauté for another 2 minutes. Set aside to cool.
  • Squeeze out the excess moisture from the shredded zucchini before using for best results. Combine all ingredients in a large bowl then pour into a prepared pie plate.
  • Bake at 350°F for 30-45 minutes or until fully set (a toothpick inserted into the center should come out clean).
  • Heat a non-stick pan over medium heat. Brown the pita on both sides. Drizzle with oil. Cut into wedges.
  • Remove from oven and cool for 2-3 minutes before serving.
  • Cut into portions and serve with pita and garnish with parsley.
