White Cheddar Mac and Cheese

Ingredients

Mac and Cheese

  • 1.5 cups Broccoli chopped into bite sized florets
  • 6 oz Andouille sausage sliced
  • 4 oz Cavatappi pasta (or your choice of pasta)
  • 1 TBSP Butter
  • 1 TBSP All-purpose flour
  • 1 cup Milk
  • 1/2 cup White cheddar cheese shredded
  • Salt
  • Black pepper
  • 2 hunks French baguette

Sweet Tea

  • 24 oz Sweet tea cold

Instructions

  • Bring a pot of salted water to a boil. Blanch the broccoli until tender. Then drain well and set aside.
  • Cook the pasta according to the package instructions. Drain well.
  • Meanwhile, melt the butter in a saucepan over medium heat. Whisk in the flour and stir for about 1 minute until bubbly and golden brown.
  • Gradually whisk in the milk until smooth. Bring to a simmer while stirring occasionally. Once the sauce starts to thicken, add in the cheese and whisk until smooth with no lumps. The sauce should be thick and creamy.
  • Heat a nonstick pan on medium heat. Once hot, saute the sausage until nicely browned and cooked through.
  • Toast the bread if desired.
  • Stir in the pasta until it is fully coated with the cheese sauce. Season with salt and pepper to taste before serving. Stir in the broccoli and sausage.
  • Portion and enjoy with bread and sweet tea.
