Watermelon Salad

Ingredients

  • 2 cups Watermelon cut into bite sized chunks
  • 1/2 cup Cucumber cut into bite chunks
  • 1/4 cup Fresh mint chopped
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Lime juice

Instructions

  • Mix all ingredients in a bowl and set aside or in the refrigerator until ready to serve. Season with salt to taste. Adjust the lime to taste.
