Prepare all ingredients as described above.
Cook porridge: Place oats, milk, cream, and vanilla pod with seeds in a saucepan over low-medium heat. Stir frequently for 10–15 minutes until oats are tender and the mixture is thick and creamy. Add a little more milk if it becomes too thick.
Make brown sugar apples: In another saucepan, add apple wedges, brown sugar, and honey. Cook over medium heat, stirring occasionally, for about 10 minutes until the apples are tender, golden, and sticky.
Brew and prepare the coffee to your liking.
Serve the porridge topped with apples, fresh fruit, and coffee.
