Add vanilla and finish cooking: When the porridge begins to thicken (after about 5–7 minutes), stir in vanilla extract. Reduce heat to low and continue stirring until creamy.
Sauté the apples: While the porridge cooks, melt butter in a small skillet over medium heat. Add diced apple, brown sugar, and cinnamon (if using). Sauté for 5–7 minutes, until the apples are soft and caramelized.
Brew the coffee: Brew and prepare the coffee to your liking.
