Prepare all ingredients as listed above.
Lay the tortilla wraps flat on a clean work surface and spread the mayonnaise evenly over each wrap.
Layer the arugula, tomato slices, deli turkey, and provolone cheese,.drizzle lightly with extra-virgin olive oil, red onion, pepperoncini, and sliced avocado. Season with salt, black pepper, and dried oregano.
Fold in the sides and roll tightly. Slice in half if desired.
In a large glass or pitcher, combine the cold sparkling water, lemon slices, and chia seeds. Stir thoroughly and allow the mixture to sit for 2–3 minutes so the chia seeds can hydrate.
Serve the turkey wraps with potato chips and lemon chia sparkling water.
