Turkey Stuffing Pie

Ingredients

  • 4 tbsp Butter
  • 2 tbsp Heavy cream
  • 3 cups Sweet potatoes peeled and cut into small like sized chunks
  • 4 slices Sourdough bread or your choice of bread, diced into small cubes
  • 2 tbsp Extra-virgin olive oil
  • 1/4 cup Celery diced small
  • 1/4 cup Carrots peeled and diced small
  • 2 tbsp Onion diced fine
  • 3 cups Chicken broth
  • 2 tsp Poultry seasoning
  • 3/4 lb Ground turkey
  • 2 tsp All-purpose flour
  • 4 Dinner rolls
  • Fresh thyme garnish

Instructions

  • Preheat the oven broiler on low.
  • Melt the butter in a pan on low heat and stir in the cream. Then set aside.
  • Bring a pot of salted water to a boil. Cook the potatoes until tender, a fork easily slides in and out, then drain well. Mash the potatoes well with a fork. Whip the butter and cream into the potatoes until combined. Season with salt and pepper to taste.
  • Layout the sour dough bread on a baking sheet and toast until crunchy and golden brown. In the meantime heat 1/2 of the oil in a non-stick pan. Sauté the celery, carrot, and onion until soft. Then mix the vegetables with the bread, season well with salt and pepper.
  • Place the stuffing mixture into an 8x8 baking dish (or appropriately sized oven safe vessel for the number of portions you are making). Mix in about 1/3 of the broth, let sit for 10 minutes to soften the croutons. Once it softens, press the bread into the bottom of the baking dish to form a crust and place it under the broiler for about 10 - 15 minutes until the broth is absorbed. Then set aside.
  • Heat the remaining oil in a sauté pan, add the turkey and flatten it without breaking it up so it can nicely brown without releasing all it moisture. Once nicely brown flip it over and brown the other side. Once browned on both sides start to break it up into smaller pieces. Stir in the flour and poultry seasoning, cook for 2 minutes. Season with salt and pepper. Stir in the remaining broth. Simmer until the broth thickens and concentrates in flavor. Taste and adjust the seasoning with salt or a little more poultry seasoning.
  • Pour the turkey mixture over the stuffing and top with potatoes. Place under the broiler until golden brown (turn the broiler to high if needed, just make sure to keep an eye on it). Serve with dinner rolls.
