Turkey Rueben

Ingredients

  • Nonstick spray
  • 4 tbsp Yellow mustard
  • 8 slices Sourdough bread
  • 4 slices Swiss cheese halved
  • 2 cups Sauerkraut or more if desired
  • 8 oz Deli turkey breast substitute roasted turkey breast from the deli meats tab
  • 4 Pickle spears

Instructions

  • Preheat a panini grill or George Foreman grill (or preheat oven to 350°F if you don't have a grill style press). Lightly grease with non-stick spray.
  • Spread the mustard on both slices of bread (or serve on the side if desired). Layer with cheese, sauerkraut, turkey, cheese, and top with slice of bread.
  • Place the sandwich on the grill press until golden brown and the cheese is melted (can also use a non-stick pan with non-stick spray covered with a lid).
  • Slice in half and serve with pickles.
