Heat a nonstick pan on medium heat. Once hot, add the oil. Saute the onion and garlic until nicely golden brown. Add the remaining ingredients and turn the heat down to medium low. Slowly simmer until the tomatoes break down completely soft. Add a little more brown sugar if needed, the flavor shouldn't be overly sweet just a nice hint of sweetness. Season with salt and pepper to taste. Remove from the heat.
Preheat a panini style grill. Lightly grease with nonstick spray(can also use a nonstick pan on medium heat)
Arrange the cheese onto the wrap, top with spinach and turkey. Fold the tortilla in half.
Cook the on the panini grill until both sides are golden brown and the cheese is nicely melted. Repeat for other portions.
In a bowl whisk the sour cream and chipotle. Add more chipotle if desired to taste. Season with salt and pepper.
Cut the quesadilla into wedges and serve with chipotle sour cream, chips and tomato jam. Garnish with cilantro.
