Prepare the Ingredients: Slice cucumber, onion, avocado, and tomato. Slice the pepperoncini peppers and set them aside.
Toast the Bread: Toast the bread until lightly golden and crispy.
Assemble the Sandwich: Spread mayonnaise on one side of each slice of bread. On one slice, layer arugula, spinach, tomato drizzled with olive oil, turkey, provolone cheese, cucumber, onion, pepperoncini and avocado.
Finish the Sandwich: Top with the second slice of bread, mayo-side down. Press gently to secure the sandwich, then slice in half.
Prepare the Lemonade: In a pitcher, combine fresh squeezed lemon juice, water, and sugar to taste. Stir until the sugar dissolves.
Serve: Serve the turkey sandwich with 2 oz of potato chips and the homemade lemonade over ice if desired. Enjoy!
