Turkey Pita

Ingredients

  • 4 Pita bread
  • 2 cups Spring mix
  • 8 oz Deli turkey breast
  • 1 cup Tomato diced small
  • 2 Pickles halved

Tapenade

  • 1/2 cup Assorted olives minced
  • 1 tsp Extra-virgin olive oil
  • 1 tbsp Pepperoncini minced
  • 2 tbsp Celery minced

Aioli

  • 4 tbsp Mayonnaise
  • 1 tsp Fresh dill chopped

Instructions

  • Whisk all the ingredients for the aioli in a bowl. Season with salt and pepper to taste.
  • In a bowl mix all the ingredients for the tapenade.
  • Warm the pita on both sides in a nonstick pan over medium heat to light golden brown.
  • Layer the pita with spring mix, turkey, aioli, diced tomato, and tapenade.
  • Serve with pickle.
