Turkey Pepper-jack Sandwich

Ingredients

  • 4 tbsp Mayonnaise
  • 1 tsp Fresh thyme
  • 1 tsp Fresh chives chopped
  • 4 Ciabatta rolls lightly toasted
  • 12 slices Tomato
  • 2 cups Baby spinach
  • 12 oz Deli turkey breast
  • 1/4 Red onion sliced thin
  • 4 oz Pepper jack cheese sliced
  • 4 oz Potato chips
  • 4 Pickles halved

Instructions

  • In a bowl combine the mayo, thyme leaves, and chives. Lightly toast the ciabatta.
  • Place the tomatoes on the bottom seasoned with salt and pepper. Layer with spinach, turkey, onion, and pepper jack cheese. Spread the herb mayonnaise on the top half of the ciabatta. Cut in half and serve with chips and pickles.
