Preheat the oven to 375 degrees.
Preheat a saute pan on medium heat. Once hot, add the oil. Saute the onion, celery, carrot, and garlic until they start to soften. Then remove from the heat.
Soak the bread in the milk for 2 to 3 minutes. Add in the turkey, Worcestershire sauce, sauteed vegetables, and season well with salt and pepper. Mix well with your hands. Place the mixture onto a foil lined baking sheet and form into an even loaf (or use a loaf pan).
Cook in the oven to an internal temperature of 160 degrees using a thermometer. Then set aside to rest for 5 to 10 minutes before slicing.
For the sauce: Heat a saucepan on medium heat. Add the broth, mustard, paprika, and tomato paste. Slowly simmer until the sauce reduces and thickens to a creamy consistency. Season with salt and pepper to taste.
Spoon the sauce over the meatloaf, serve with bread.
