Turkey Colby Melt

Ingredients

  • 4 tbsp Butter
  • 8 slices Sourdough bread or bread of your choice
  • 4 Tbsp Mayonnaise
  • 4 oz Colby cheese sliced
  • 2 cups Spring mix
  • 12 oz Deli turkey breast
  • 12 slices Tomato
  • 4 oz Potato chips
  • 4 Pickles halved

Instructions

  • Preheat a large pan over medium heat.
  • Butter one side of each slice of bread and place in the pan. Spread mayo on the insides of each slice of bread.
  • Put a slice of cheese on each bread slice. On one slice of bread, place the spring mix and turkey; and on the other slice, place the tomatoes seasoned with salt and pepper.
  • Place the bread, butter side down in the pan. Cover with a lid and cook until the bread is golden brown and the cheese has melted.
  • Cut in half and serve with chips and pickles.
