Prep the ingredients per the instructions above.
Toast the sourdough bread slices, if desired, until golden and slightly crisp.
Spread cranberry sauce on one side of each slice of bread.
Layer two slices with baby spinach, sliced deli turkey breast, and brie cheese.
Place the remaining bread slices on top, cranberry side down, to form sandwiches.
Cut the sandwiches in half and set aside.
To make the chia fresca, combine all ingredients together. Let sit for 5 minutes to allow the chia seeds to bloom and thicken slightly.
Serve the sandwiches with carrot sticks, hummus, and chia fresca.
