- Toast the sourdough bread slices if desired, until golden and slightly crisp. 
- Spread cranberry sauce on one side of each slice of bread. 
- Layer two slices with baby spinach, sliced deli turkey breast and brie cheese. 
- Top each with a remaining bread slice, cranberry side down, to form sandwiches. 
- Cut the sandwiches in half and set aside. 
- To make the chia fresca, stir together all the ingredients until combined. Let sit for 5 minutes to allow the chia seeds to bloom and thicken slightly. 
- Serve the sandwich with carrots, hummus, and chia fresca.
