Toast the sourdough bread slices if desired, until golden and slightly crisp.
Spread cranberry sauce on one side of each slice of bread.
Layer two slices with baby spinach, sliced deli turkey breast and brie cheese.
Top each with a remaining bread slice, cranberry side down, to form sandwiches.
Cut the sandwiches in half and set aside.
To make the chia fresca, stir together all the ingredients until combined. Let sit for 5 minutes to allow the chia seeds to bloom and thicken slightly.
Serve the sandwich with carrots, hummus, and chia fresca.
