Prepare all ingredients as described above.
Heat a skillet over medium heat. Cook the bacon on both sides until crispy. Drain on paper towels.
Toast the sourdough bread to your preferred level of crispness.
Spread mayonnaise and mustard on one side of each toasted sourdough slice.
Build each sandwich: place one slice of bread (condiment side up), then layer lettuce, tomato, turkey, bacon, and avocado. Top with the second slice of bread (condiment side down).
Cut the sandwich in half. If serving the turkey warm, heat the deli turkey to 165°F (74°C) before assembling.
Combine all the ingredients for the chia fresca. Stir well and let sit for 5 minutes until the chia seeds begin to bloom.
Serve the sandwich with carrots, hummus, and sparkling chia fresca.
