Prepare all ingredients as described above.
Heat a skillet over medium heat. Cook the bacon on both sides until crispy. Drain on paper towels.
Toast the bread to your preferred level of crispness.
Spread mayonnaise and mustard on one side of each toasted bread slice.
Build each sandwich: slice of bread (condiment side up), lettuce, tomato, turkey, bacon, and avocado, then top with the second slice of bread (condiment side down).
Cut the sandwich in half.
To make the sparkling chia fresca, combine all the ingredients. Let sit for 5 minutes for the chia to bloom.
Serve each sandwich with carrots and ranch, pickle, and sparkling chia fresca.
