Turkey Avocado Sandwich

- 4 slices Sourdough bread lightly toasted
- 1 cup Baby spinach
- 4 slices Tomato
- 8 oz Deli turkey breast or use fresh roasted turkey see recipe in Deli meats tab
- 1/4 cup Red onion shaved or sliced thin
- 1 Avocado pitted and sliced
- 1 cup Carrots cut into 3 inch sticks
- 4 TBSP Ranch dressing
Aioli
- 2 TBSP Mayonnaise
- 1 clove Garlic grated
- Salt to taste
- Black pepper to taste
For the aioli: whisk all ingredients in a bowl until fully combined. Season with salt and pepper to taste. Then spread on all slices of bread.
Layer with spinach, tomato seasoned with salt and pepper, turkey, onion, avocado then bread.
Cut in half. Serve with carrots with ranch and iced tea.
