Spread the cheese onto the tortilla and top with spring mix. On one half, place the tomatoes and turkey, season with salt and pepper, then fold the tortilla in half.
Heat a little of the oil as needed in a non-stick pan, over medium-low heat.
Place the quesadilla in the pan and cook on both sides until the cheese is nicely melted and the outside is golden brown. Repeat for other portions.
For the aioli: Whisk all the ingredients in a bowl. Season with salt and pepper to taste.
Cut into wedges. Serve with aioli on the side.

Pro Tip - watch the heat, don't be afraid to use a lower temperature so that the outside gradually comes to a golden brown while the cheese is melting.
