Ingredients

Soft-Boiled Eggs

  • 4 cups Water
  • 1 tsp White vinegar
  • 2 Eggs

Coffee

  • Coffee
  • Sweetener optional
  • Creamer optional

Tropical Protein Bowls

  • 2 cups Greek yogurt (2% recommended)
  • 1 cup Mango diced
  • 1 cup Pineapple diced
  • 2 tsp Chia seeds
  • 2 TBSP Unsweetened coconut flakes
  • 2 TBSP Pumpkin seeds

Instructions

  • Bring a small pot of water to a gentle boil. Add white vinegar.
  • Carefully lower the eggs into the boiling water. Boil for 6–7 minutes (6 for slightly jammy, 7 for firmer centers). Transfer immediately to cold water and cool for 2–3 minutes. Peel when cool enough to handle.
  • Brew and prepare the coffee to your liking.
  • Portion the Greek yogurt. Top with mango, pineapple, chia seeds, coconut flakes and pumpkin seeds.
  • Serve the bowl alongside a soft-boiled egg and coffee.
