Tortellini Bolognese

Ingredients

  • 3/4 lb Ground beef
  • 4 cloves Garlic minced
  • 2 cups Canned diced tomato
  • 1 cup Crushed tomatoes
  • 1/2 lb Cheese tortellini or other pasta of choice
  • 3 tbsp Fresh basil chopped
  • 2 tbsp Parmesan cheese
  • 4 oz Provolone cheese shredded
  • 4 slices Crusty bread lightly toasted
  • 1 tsp Extra-virgin olive oil
  • 1/2 tsp Dried oregano
  • Fresh parsley garnish

Instructions

  • Heat a large oven safe sauté pan or skillet over medium heat. Add the beef and break it up into smaller pieces with a wooden spoon. Add in the garlic and sauté until golden brown. Add in both types of tomato, then season with salt and pepper. Partially cover with a lid and bring to a low simmer. Simmer, stirring occasionally for 30-40 minutes to cook out the acidity of the tomatoes (add a little sugar to the sauce if needed to balance out the acidity).
  • In a pot of salted water, cook the pasta according to the directions on the package. When the pasta is finished drain well.
  • Preheat the oven broiler on low. Toss the pasta, basil, and parmesan cheese in the sauce and top with provolone. Place under the broiler until the cheese is melted.
  • Drizzle the bread with olive oil and sprinkle with oregano, salt, and pepper. Garnish with parsley and serve.

Notes

Pro Tip; Great meal to batch cook and freeze in portions so you can defrost and heat up so have an already prepared meal
