Heat a large oven safe sauté pan or skillet over medium heat. Add the beef and break it up into smaller pieces with a wooden spoon. Add in the garlic and sauté until golden brown. Add in both types of tomato, then season with salt and pepper. Partially cover with a lid and bring to a low simmer. Simmer, stirring occasionally for 30-40 minutes to cook out the acidity of the tomatoes (add a little sugar to the sauce if needed to balance out the acidity).
In a pot of salted water, cook the pasta according to the directions on the package. When the pasta is finished drain well.
Preheat the oven broiler on low. Toss the pasta, basil, and parmesan cheese in the sauce and top with provolone. Place under the broiler until the cheese is melted.
Drizzle the bread with olive oil and sprinkle with oregano, salt, and pepper. Garnish with parsley and serve.
