Place the ham and tomato slices on the bread, drizzle with a little oil, season with salt and pepper, and sprinkle with mozzarella. Place under the broiler until the tomatoes start to soften and the cheese is melted. Drizzle with more oil before serving, sprinkle with oregano and red pepper flakes (if desired).
Preheat a non-stick pan over medium heat. Once hot, add oil. Crack eggs on a flat surface and into the pan being careful not to break the yolk. Cook until the whites of the eggs are firm and no longer runny (about 3-4 minutes).
Serve the toast with eggs and garnish with basil. Serve with plum.
