Preheat the oven to 200 degrees. (if making multiple omelets keep cooked omelets in the oven on a baking sheet until all are complete)
Form the ground sausage into patties with your hands. In a nonstick pan over medium-low heat. Cook the sausage patties 3 - 4 minutes per side until they are no longer pink in the middle. Set aside and keep warm.
In a nonstick pan over medium heat, add the oil; saute the olives for 1 minute, then add in the tomatoes and scrambled eggs.
After the egg begins to set around edges, with a heat-safe spatula, carefully lift the egg from the side and tilt the pan so the uncooked egg can reach the bottom of the pan. Repeat this process, tilting as necessary until the egg is no longer runny.
Toast the bread.
Add the cheese; with a spatula fold the omelet in half, allow the cheese to melt. Serve with toast and orange sections.
