For the sausage: cook in a 400°F oven to an internal temperature of 150°F using a thermometer.
Heat a non-stick pan over medium heat. Once hot, melt the butter then add in the tomatoes, egg, and cheese. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
Portion and top with feta and scallions; serve with toast, sausage, and cantaloupe.

Pro tip: purchase a container of pre cut cantaloupe instead of having to get a whole one.
