Tomato Corn Bruschetta

Ingredients

  • 4 slices Crusty bread
  • 3/4 cup Tomatoes diced
  • 1/4 cup Corn
  • 1 tbsp Red onion finely diced
  • 1 clove Garlic minced
  • 1 tbsp Lime juice
  • 1 tbsp Fresh cilantro chopped
  • 2 tbsp Extra-virgin olive oil

Instructions

  • Toast the bread to golden brown.
  • Mix together all of the ingredients except for the bread. Season with salt and pepper.
  • Spoon the bruschetta mixture onto the bread.
