Taylor Ham Bagel Sandwich

Ingredients

  • 4 Everything bagel lightly toasted (or bagel of your choice)
  • 4 tsp Extra-virgin olive oil
  • 8 slices Taylor Ham (also known as pork roll) substitute deli ham or Canadian bacon
  • 8 Eggs beaten
  • 1/3 cup White cheddar cheese shredded
  • 2 Kiwi Peeled and sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Optional: slice out 1/4 to 1/2 inch or your desired amount of the middle of the bagel to decrease the bagel size.
  • Lightly toast the bagel.
  • Heat a nonstick pan on medium heat. Once hot, add half of the oil. Brown the taylor ham well on both sides then place on the bagel.
  • To the same pan add the remaining oil and crack in the eggs. Cook until the whites firm up then flip the eggs over and top with cheese. Cook until the cheese is melted, cover with a lid to help melt. Season with salt and pepper.
  • Portion the eggs onto the bagel. Cut in half and serve with kiwi.

Notes

Pro tip: Purchase a container of precut watermelon so you don't have to purchase an entire watermelon if desired.
