Tarragon Turkey Salad Melt

Ingredients

  • 12 oz Deli turkey breast chopped
  • 4 tbsp Celery minced
  • 3 tbsp Red onion minced
  • 1 tsp Fresh tarragon chopped
  • 3 tbsp Mayonnaise
  • 4 slices Sourdough bread
  • 8 slices Tomato
  • 8 slices Swiss cheese
  • 2 oz Potato chips
  • 4 Pickle spears
  • 1 tsp Fresh parsley garnish

Instructions

  • Preheat the oven broiler on low.
  • In a mixing bowl, toss the turkey, celery, onion, tarragon, and mayonnaise. Season with pepper to taste. Stir to combine. Add more tarragon to taste if needed.
  • Lightly toast the bread, top with the Turkey Salad, tomatoes, and cheese. Place on a baking sheet under the broiler and cook until the cheese has melted.
  • Serve with chips and pickle. Garnish with parsley.
