Taco Soup

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion diced small
  • 3 cloves Garlic minced
  • 3/4 pound Ground turkey
  • 1 pack Taco seasoning or make your own see notes
  • 6 cups Chicken broth
  • 1/4 cup Tomato paste
  • 1 cup Black beans drained and rinsed
  • 1/3 cup Cheddar cheese shredded
  • 2 cups Savoy Cabbage shredded
  • 4 oz Tortilla chips
  • 2 tbsp Fresh cilantro garnish
  • 1/2 cup Grape tomatoes sliced
  • 1 Jalapeño pepper sliced, optional

Instructions

  • Heat a large pot over medium heat. Once hot, add the oil. Sauté the onion and garlic until golden brown. Crumble in the turkey and brown while breaking it up into smaller pieces with a spatula. Once partially browned, stir in the taco seasoning until well combined.
  • Stir in the chicken broth, tomato paste, beans, and season with salt and pepper. Cover with a lid and simmer for 25-30 minutes. Stir in the cheese. Taste and adjust the seasoning with salt and pepper or additional spices if needed.
  • Portion and serve with cabbage and chips. Garnish with cilantro, grape tomatoes, and jalapeno (if using).

Notes

Make your own Taco Seasoning - Mix all ingredients together in a bowl (use what you need in the recipe to taste, save the rest in a sealed container for future use)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon of cajun seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
