2Sweet Potatoes peeled and diced into like size pieces

2tbspBrown sugar
Instructions
In a pot of salted boiling water cook the potatoes. (Check different potatoes by inserting a fork, once the fork slides in and out with ease take them off heat and drain well).
In the meantime, in a saucepan on low heat, melt the butter then stir in the milk and brown sugar until it is dissolved.
Whip the potatoes in a mixer on low or by hand using a wire whip to break up the chunks until they are smooth.
Slowly mix in the milk & butter mixture. Whip until smooth. Adjust the seasoning with salt and pepper to taste before serving.
