Instructions
Soak the potatoes in a bowl of cold water for 1 hour.
Mix all the ingredients for the sauce in a bowl until fully combined. Refrigerate until ready to serve.
Heat the oil in a pot to 375 degrees.
Fry potatoes, seven or eight slices at a time, about 2 minutes or until golden brown on both sides, turning once. Drain on paper towels; sprinkle with salt.
Serve with sauce.
Notes
Sweet potato chips go from perfect to burnt very quickly. Start watching each batch at the 20 minute mark and remove them the moment they look 90% crispy. They will continue to crisp up as they cool.
