Sweet Potato Breakfast Skillet

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 large Sweet potatoes peeled and diced small
  • 1/2 Onion diced
  • 1/2 Green bell pepper diced
  • 6 oz Chicken sausage links diced
  • 8 Eggs
  • 4 tbsp Feta cheese
  • 4 slices Rye bread toasted (or bread of your choice)
  • 2 cups Raspberries

Instructions

  • Preheat the oven broiler on low.
  • Heat oil in a nonstick pan over low medium heat. Add in the sweet potatoes and get a nice golden brown on all sides, approximatley 5 - 6 minutes. Add the onion and peppers; saute for 2 - 3 minutes.
  • Add in the chicken sausage and brown. Make little pockets using a spoon and crack the eggs into the pockets. Season with salt and pepper. Top with feta cheese.
  • Transfer the pan to the oven underneath the oven broiler, cook about 4 - 6 minutes until the whites of the eggs are firm and divide into portions.
  • Toast the bread. Serve with raspberries.
