Sun Dried Tomato Pasta

Ingredients

  • 1/2 onion finely diced
  • 1 clove garlic minced
  • 2 oz Sun dried tomatoes cut into thin strips
  • 8 oz penne pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 4 oz Gruyere cheese shredded
  • 2 tbsp Fresh parsley chopped
  • 1 lb Ground beef
  • 4 slices french bread

Instructions

  • In a boiling pot of salted water cook the pasta according to the directions of the package.
  • In a nonstick pan over medium heat, brown the ground beef, breaking it up with a wooden spoon into smaller pieces, about 4 - 5 minutes. Add the onions and cook, stirring often, 5 minutes. Add garlic and cook one minute more, stirring constantly. Add sun-dried tomatoes, penne, chicken broth, and heavy cream and turn the heat to high.
  • Bring to a boil then reduce to a simmer. Stir, cover with a lid, and cook for 10 minutes. Stir in the cheese and serve. Garnish with parsley and serve with bread.
