Stir Fry Noodles

Ingredients

  • 8 oz Rice noodles or your preference of noodle
  • 2 tbsp Extra-virgin olive oil
  • 1/2 Onion chopped
  • 1 cup Mushrooms sliced
  • 1 cup Celery sliced
  • 1 cup Red cabbage shredded, or use any vegetables you have leftover
  • 4 cloves Garlic minced
  • 2 tsp Fresh ginger minced
  • 3/4 lb Ground beef
  • 2 tsp Sesame oil
  • 1/4 cup Reduced-sodium soy sauce
  • 3/4 cup Beef broth
  • 4 tbsp Scallions chopped, plus more for garnish
  • 4 Dinner rolls

Instructions

  • Bring a pot of salted water to a boil. Once most of the meal is complete cook the noodles according to the directions on the package. Drain well.
  • Heat a nonstick pan on medium high heat. Once hot. add in the olive oil, onions, mushrooms, celery, and cabbage. Saute until the vegetables start to soften. Then add in the garlic and ginger, saute for 1 - 2 minutes. Crumble in the beef, break it up into smaller pieces until it is no longer pink. Season with salt and pepper.
  • Add the sesame oil, soy sauce, broth, and scallions; bring to a simmer until the liquid reduces and concentrates in flavor. Taste and adjust any of the ingredients as needed.
  • Once very flavorful, toss in the noodles. Serve with bread and garnish with scallions.
